A delicious and easy Eggs in Purgatory recipe, which pairs poached eggs with a decadent and flavorful tomato sauce.
Ingredients
- 3 tablespoons Olive Oil, extra virgin
- 2 Garlic Cloves, minced
- 1 Onion, small, chopped
- ½ teaspoon Red Pepper, flakes
- 14 oz Tomatoes , can crushed (preferably imported from Italy)
- 1 tablespoon Tomato Paste
- 4 Eggs
- 1 tablespoon Parmigiano Reggiano
- ½ teaspoon Curry Powder
- ¼ teaspoon Paprika
- ¼ teaspoon Garlic Powder
- Dried Oregano, to taste
- Salt, to taste
- Black Pepper, to taste
Instructions
- Heat extra virgin olive oil in a large skillet over medium heat.
- Add chopped onion, minced garlic, and red pepper, and cook until lightly golden.
- Add tomatoes and season with curry, paprika, garlic powder, oregano, salt, and pepper. Stir well to combine.
- Add tomato paste and stir well again.
- Bring to a boil, reduce the heat and cook until it begins to thicken.
- Push the wooden spoon into the tomato sauce to create 4 indentations.
- Crack each egg into its own sauce indentation.
- Make sure to cover the skillet, otherwise the eggs won’t cook properly.
- Simmer until the egg whites are done (about 2-3 mins).
- Sprinkle with Parmigiano Reggiano.
- Serve and enjoy.
Notes
- Serve sprinkled with fresh herbs to taste.
- Dip bread/toast into the sauce for extra decadence.
